Extra-virgin olive oil is the most digestible of the edible fats and:

bodies;
it slows down the aging process;
it helps bile, liver and intestinal functions.
The human body easily absorbs olive oil. This means that the body absorbs the good ingredients such as vitamin E and phenols, which have anti-oxidizing properties and prevent the oxidization of fatty tissue. Another important element is chlorophyll. Olive oil facilitates the cleansing of the gall bladder. Olive oil is not only easy to digest but it also helps the digestion of other fatty substances because it helps the secretions of the peptic system and stimulates the pancreatic enzyme lipace.

3. Mads L Holvik Tue 24 Nov 2009 @ 19:42 I don`t understand why they put olive oil on everything. It is like it is not food if there is not olive oil on it. What about people who dont like olive oil or they don`t digest it well? I think it should be left optional by just having a bottle on the table so people could help themselves if they wanted olive oil.

I never saw the filling being cooked ASIDE the pizza and then put on the top. We usually prepare alla the ingredients and put them on the pizza BEFORE and then we shove it in the oven!
Anyway Gennaro seems pretty happy of the result. Worth to try!
