hang on, what about the intermediate step, between making vertical cuts and slicing downwards: the horizontal cut to get the size cube you need? Is that not done anymore?

Very nice; what kind of knife should we use? And shouldn't we hold down the onion, with our finger tips; tucked under, to prevent winding-up with a platter of chopped onions and fresh finger tips.
