A little known steak with fat marbled through it. This keeps it moist as it cooks. Some supermarkets call this Shoulder steak or Collar steaks, it's all the same cut and great for pan frying or grilling for a quick supper or best of all on the bbq in the summer.

This is a boneless steak cut from the top of the pork shoulder. It doesn’t have a rim of fat round the edge, but what it does have is a beautiful marbling of fat through the meat.
