Ruffed Grouse

Jamie- Just watched the free range chicken special on the cooking network. Great episode, hopefully the world will get to this stage sooner than later.
My question today relates to Ruffed Grouse, an elusive bird we hunt here in Alberta, Canada. I have typically done a light breading because I find it relatively easy to prepare, and I always fear over cooking (this is a great bird to eat given its berry diet, but it can be over cooked quite easily unlike chicken meat.)
So, what recommendations do you have for me to create a new dish with my grouse? I have found some new territory this year and plan on grabbing a few more than normal.
