grilled venison chops

Part of our supper tonight
Venison loin chops.. simple marinaded with minced garlic , lemon zest, avocado oil
seasoned with coarse sea salt and cracked black and put on a very hot charcoal grill.. squeezed lemon juice from the zested lemon over the chops just before the end of grilling.
cooked med rare , the marinade and juice kept the meat nice and moist .
I am just sad that I don't have any more in the freezer . will have to definitely get my hunting license now.

Homemade chocolate turtles
My wife took a weeks vacation and basically opened a bakery and chocolate candy shop in our house this past week.. these are just a small sample of the unreal christmas goodies that have been produced ths week. Our friends , family and co-workers are always happy this time of year.

nice bit of fawn venison roast.. wrapping it in bacon to keep it from drying out in a slow oven.
between bacon and roast is a paste of dry sage, minced shallot, minced garlic, small glug of olive oil, black pepper, pinch of cumin and about 1 tbsp of maple syrup.
