Nice fawn roast all tucked into his bacon blanket and ready for a nice sleep in warm bed.

nice bit of fawn venison roast.. wrapping it in bacon to keep it from drying out in a slow oven.
between bacon and roast is a paste of dry sage, minced shallot, minced garlic, small glug of olive oil, black pepper, pinch of cumin and about 1 tbsp of maple syrup.

Bought some candycane beets at the farmers market. slow braising them with some shallots then going to camelize with a bit of maple syrup
