Dear hubby celebrates a pre christmas party with his colleagues, I am at home and waiting for the big snow storm to come. Kids are in bed - perfect night to spend with making cookies.
Never tried these with a coconut meringue topping - think I will dip them into chocolate, because I like the combination of coconut and chocolate... ![]()

I started baking christmas cookies today and made a batch of chocolate cookies. My little daughter helped me, we had a lot of fun. ![]()
I used a simple recipe for double choc cookies, filled them with a decent amount of hazelnut spread and decorated them with milk chocolate coating.

... and daikon and red pepper salad.
I marinated the shredded daikon, sliced onion, and roughly cut peppers in a dressing of lingonberry vinegar, safflower oil, tarragon mustard, s&p, chopped parsley, and honey. Then I fried some quartered mushrooms in a few drops of oil, softened some diced onions, and seasoned with s&p and thyme. In another pan I roasted sliced bread dumplings from both sides, added the mushrooms, and topped this with shaved parmesan.
Tonite´s quick und yummy dinner using weekend´s leftovers. ![]()
