About
This is the first blog I've done but what better place to start than my favourite website. I live on the Mornington Peninsula south east of Melbourne in Australia.
The only things I knew how to cook when I moved out of home were chilli con carne and spaghetti bolognaise. From there I learned from friends, lovers and books. In the past 10 years the internet and television cooking shows have been added inspiration. I began my love affair with cooking all things sweet and fattening like biscuits, cakes and pies. As the years have gone by my sweet tooth is not so demanding and now I focus mostly on our main meals at dinner time.
I live on a suburban block where we are lucky to have enough space for a vege patch. We do rent so we haven't spent much on our garden. We have our own compost; the compost bin was already here when we arrived, just a bottomless plastic tub with a lid. The garden was so overgrown with weeds when we first moved in it took my partner, my father and I three full days of weeding and bagging rubbish to discover the garden beds. We have reworked some of it with shovels, sweat and left over bricks that were behind the garden shed. We invested a few dollars in some herb plants, native trees and chicken poo. The soil here is a clay based soil but the compost has done wonders on the vege patch in the last 2 years and is now full of worms and black healthy soil. I'm not the best gardener in the world but this year I'm going to get some more focus and enthusiasm for my garden and see if I can build a stronger relationship with soil and plants.

Recipe challenge- Asparagus Prawn and Mussel pasta

I created this recipe for the seafood and pasta cooking challenge, Im really chuffed with how this came out, we will definately be having it again.
Asparagus Prawn and Mussel pasta in Creamy Wine Sauce
Ingredients
12 green tiger prawns, veins removed, leave tails on
I kilo of mussels
500grms tube spaghetti
2 tablespoons of fresh lemon juice
1 cup white wine
1/2 cup double cream
3 tablespoons olive oil
3 tablespoons butter
2 tablespoons fresh parsley
1 tbsp fresh thyme
6 cloves garlic minced
4 thumb sized shallots, finely chopped
1 cup grated pecorino cheese (paremsan is fine too)
1 cup asparagus cut in to 1 inch pieces
salt and fresh ground black pepper to taste
Method
Cook pasta to aldente, drain and mix with 2 tablespoons of olive oil, set aside in large bowl and keep warm. Fry prawns in 1 tablespoon of butter until orange in colour, 80% cooked is fine, they will get a heated up at the end, set aside. In pot melt 2 tablespoons of butter, add lemon juice, thyme, 4 cloves of crushed garlic and wine, steam mussels with lid on for about 3-5 minutes. Set mussels aside, discarding the ones that haven’t opened, leave the broth in the pot you will need that in a couple of minutes. Heat a small amount of olive oil in fry pan and saute asparagus, remaining 2 cloves of minced garlic and shallots gently cook until shallots are translucent, add reserved stock and simmer until asparagus is tender but still firm. Add cream, parsley, mussels and prawns, season with salt and pepper to taste, once sauce has reached a simmer remove from heat. Pour sauce over pasta and mix through, top with mussels and prawns and sprinkle with pecorino cheese.
