about me
i am a native of Northern Ireland and moved to Canada when i got married - currently i am living ten months of the year on a First Nations Reserve in Northern Canada as my Husband works there - it is in the lower arctic and temperatures of minus 40 and lower are normal i love to cook but am limited in that the rez is fly in and only basics are brought in and not even every week - the costs are also prohibitive - but when we move off rez i have such wonderful plans!

Raspberry Bars

RECIPE / SOUP AND SALAD

1.Preheat oven to 350 degrees F (180 degrees C). Greasea 8 inch square baking pan.

2.In large bowl, mix together the flour and baking powder. Cut in 1/2 cup chilled butter cut into small pieces. Mix until coarse crumbs form. Stir in eggs, 1 at a time, into the flour mixture. Add the milk and stir til a soft dough forms.

3.Spread dough in pan, pressing with fingers to cover bottom evenly. Spread the jam over top.

4.Prepare topping, in a medium sized bowl. Mix together the sugar and 1/4 cup melted butter. Stir in coconut and vanilla. Spread on top of jam layer.

5.Bake til topping is lightly browned, about 30 minutes. Cool completely. Cut into bars.

wild blueberries

last weekend we went out for a drive to the bay - i picked some wild blueberries - though my husband wouldn't eat them as he said they were probably covered in bear pee.... fussy or what?? smile

RECIPE / MEAT

Cut meat into small chunks – pour oil into pot and cook meat over medium high heat for ten minutes – stir from time to time – add more oil if needed
Add onions and cook until golden brown – add water, carrot, turnip, celery, potato and soup  – stir well
Bring to boil – simmer for two hours – add more water if necessary
Add cornflour to water and mix well – add slowly to stew – mixing well – season and serve

school picnic

in June the school had a picnic - more of a BBQ - nothing special in the way of food - cheeseburgers and hot dogs for the students - bannock and floured trout for the community elders - and heart palpitations for the teachers as there were black bears at the site just a couple of hours before we all arrived - and kindergarten kids look bear bite size to me!
