Hi everyone,
Here is a picture of a comment that we received from a very happy customer at a restaurant that I have partnered up with called Carnevino Steakhouse in Las Vegas. The other picture of the Chef holding the plate with the steak on it is of Chef Shirley who works at Carnevino. She is a kick ass Chef and runs Carnevino that is a 320 seat restaurant. Have any of you been to the restaurant?

Hi Everyone,
Here are some pictures of a spit roasted pig that I cooked recently when I appeared on the Jimmy Kimmel show a couple of months ago. I call this the Cocoon technique where I wrap the pig in plastic and this process keeps all of the moisture in. Before wrapping the pig I marinade it in orange and lime juice, cumin and oregano. The pig is cooked for about 14 hours and the plastic is left on for about three quarters of the time. The heat is not hot enough to melt the plastic, kind of like sous vide . It's delicious served with a simple salad and corn bread.

Hi everyone,
I was thrilled when Jamie asked me to come on board to be the guest moderator on the Summer Food forum. I am often on Jamie’s site and enjoy the forums and the conversations that are occurring about food from the four corners of the planet. Next week I will send Danny some of my favorite barbeque and marinade recipes so keep an eye out for these. In the meantime I am here to answer any of your questions on how to prepare for the perfect barbeque, cooking times, marinades, what to barbeque, do’s and don’ts, the highs and lows, basically anything that will make your barbeque experience a good one.
I noticed as well that some of you had some great suggestions for what Jamie could prepare for his Summer Party so how about you send me some of your tried and tested Barbeque marinades and you never know, I may have a few pointers on how you can make them even tastier.
