Quick sausage and tomatoe casserole

RECIPE / MEAT

Brown the sausages under the grill.  Chop onion finely and cook for 5 mins in a large pot.  Add canned tomatoes, beans (or other choice). When the sausages are browned cut in half and add to the tomato mixture in the pot.  Reduce heat to low and simmer for 20 mins.  Add torn fresh basil and simmer for a further 5 mins.  You can use dried basil if fresh isn't handy..but fresh is best.

If I'm in a tearing hurry I serve this with rice and some steamed broccoli and cauliflower.  Otherwise my family enjoy it with mashed potatoes and whatever other veg we have on hand.
