Howzit! My name is Mac from Cocoa, Florida. Carlos Antonio is just a name given to me in Venezuela. I really enjoy cooking and I am having a blast using the forums. I hope you enjoy the recipes I put on here. Many are gathered from different nations I have traveled to. I am always looking to try new dishes or when I find one in a restaurant I try to recreate it at home and it is usually a success.
Any tips or advice is always appreciated.

Not much to blog today. Other than feeling a lot better with the loss of almost 25 lbs.
I had Turkey for dinner last night and this morning my bar and a pear. For lunch I had chicken, carrots and blueberries.
It's amazing how much flavor food has when you don't use spices. Sometime I wonder if we don't like the flavor of something ad that's why we disguise it with spices.
Just once try eating a baked potato with no butter, salt, pepper or sour cream. It has the most smooth ad comforting flavor. Oh and the steamed asparagus I had last night. It was so good just by itself. I think we get so caught up in the culinary arts that we have to try and out-do our last meal. Sometimes I think we just need to bring it back down to the basics.
One thing that is awesome without spices is rotisserie chicken. I personally don't have one but friends do. When they cook the chicken they don't put salt or pepper or anything on it and it taste wonderful.
Tomorrow I go to weight in and I am hoping to be at or past 25 lbs.
Well I'd better get back to work. Have an AWESOME DAY!

What an awesome day! This morning I went to weigh in and was down another 2 lbs. That's now a total of 23 lbs since the beginning. Woo Hoo!
I hope to go walk tonight. Last night I had Bible Study and didn't get home until about 10pm. Tonight I get off work at 8pm so I should be able to go for my walk. My foot is much better than it was last week. If you remember I had tendinitis last week and it has subsided tremendously.
I know one thing, when I'm stressed walking is the best thing for me to get me relaxed. Soon I hope to start working out again so I can firm up some of the saggy areas.
Today for breakfast I had my bar and for lunch I had turkey, broccoli, cauliflower, carrots and a pear. For dinner I had turkey, asparagus and a 3 oz red potato.
I also have protein supplements 4 times per day.
I'm feeling better that's the main thing.

Did you ever wonder "what's the point in being healthy?" This is something that runs through my mind and as I look around at others I find my answer. Growing up in Florida I was always a husky kid. Not fat just on average larger than the other kids in the neighborhood. I grew up on Lake Poinsett in Cocoa, Florida. I can remember waking up at 7 in the morning and would leave the house and not come home until 5 in the afternoon. My friends Alfred and Billy and I would spend the whole day playing in the woods, riding our bikes all around the trails surrounding our neighborhood and one time we took my brother's surfboard and paddled all the way from my house to Alfred's house about two miles by water. (We got in trouble by Alfred's dad who was a Florida Marine Patrol. He yelled at us for a good 30 minutes about people being attacked by alligators or hit by boaters.)
The point I'm trying to make is that we were always scurrying around and getting plenty of exercise. We didn't have video games, 24 hour cartoon channels and we only had 3 TV stations. If you did want to play Atari you waited until you parents took you to Sears and you played on their demo model while your parents shopped.
Back then who cared if you ate fattening hamburgers, hot dogs, candy, ice cream and potato chips? You ate and then you ran it off. The bad thing about today is the diets have changed much but the activity levels have. I know people who allow there children to spend every waking hour playing video games and the parent's excuse is "At least they're not our getting into trouble." What a stupid and shallow way to look at it.
The more active you are at an early age the healthier you will be at an older age. I for one choose not to allow my nephew much time during the week to play video games. I want him to get out there and do "Boy" stuff. Camping, archery, swimming, kayaking, running, surfing and biking.
As far as today goes. I am having a shrimp salad for lunch and a pear for the fruit. I have yet to decide on dinner.

This morning I was down 1/2 lb. Woohoo!
Last night I grilled chicken, grilled asparagus and grilled squash.
I once again used just cracked peppercorns and kosher salt. I enjoy using my new Mortar and Pestle to crush the peppercorns so that when you eat the grilled chicken every once in a while you get that robust pepper flavour.
Today for lunch and tonight for dinner I will once again have left overs from last night.
I need to take photos off the food I'm grilling. I am so amazed at how easy it is to grill once you understand the basics. I never realized until I lived in South Africa that I had always been grilling with the coals too hot and food would stick and burn or flame up too much.
I don't like using a gas grill I use charcoal and wood. I like the mesquite wood the best. I do need to get some oak for the future.
I've gotta get back to work.

Well I'm at work today. For breakfast I did my bar and then for lunch I had grilled chicken, tomatoes and mixed berries. That was then end of the grilled chicken I cooked last weekend so tonight I will be grilling again. I have never grilled turkey breast I'm thinking of trying that.
I am not a huge fish eater unless it is Mahi or Tuna. I will eat Talapia and Salmon but I don't really care for the fishy smell. I do like catfish but it is not the healthiest. I may get some shrimp and grill them as well.
Other things I like on the grill are vegetables. As long as they don't fall through the cracks. I like all kings of peppers grilled. From mild to hot and everything in between.
I don't go weigh in until the morning so as far as that progress goes we'll all have to wait.
I hope to go walk tonight. 3 miles is the goal.
I've got to get back to work.
