I pile on the pounds way too easily so I try and cook low-carb, but definitely not low taste! I do, however, give in on occasion and go for high carb, just for the hell of it. I love to bake, and usually end up taking it all into work so that they eat it, not me!

Simple Crackers
* 2 Cups flour
* 1 tsp. baking powder
* 1/2 tsp. salt
* 2/3 Cup warm water
* 1/3 cup olive oil
1. Preheat the oven to 400.
2. Lightly grease two large cookie sheets. Combine the dry ingredients, and then stir in the water, oil and mix until a smooth dough forms.
3. Divide the dough in half and flatten each half on a cookie sheet. Use a small rolling pin or even your fingers for a rustic, uneven look. Once the dough is spread thin, use a sharp knife or a pizza cutter to cut the dough into squares. The elasticity in the dough will make the crackers shrink slightly and pull away from each other; this makes them easy to bake without sticking together.
4. Brush lightly with an egg wash (one egg white and 2 tablespoons of water) or spray lightly with olive oil.
5. Sprinkle with the topping of your choice. Experiment with your favorite flavors, or try one of these variations: Chopped rosemary and sea salt, sesame seeds, poppyseeds and onion salt, Parmesan cheese
6. Bake for 10-12 minutes until the crackers are golden and crispy.

I happened to have apple cinnamon bread flour in the cupboard so I used that. Only put 1/2 tsp salt in though and that seemed to work nicely. I rolled them out on a non stick baking sheet (Silpat) as it was much easier that way. I also did not bother brushing them with anything.
I made another batch later with plain flour and some parmesan cheese. ADDICTIVE!

Hubby stripped the tomato plants of all their fruit today both green and red. We are having a lot of building work done and the plants had to go. They were at the end anyway and our weather is not good enough now to ripen anything else.
I now have a huge bag full of tomatoes! From tiny up to large, all colours.
I can make chutney! But I have no jars to put it in. Boo. I can see that I am going to have to ask around at work.
I could freeze them maybe? Clean and chop them just freeze it until I have enough jars for chutney. You know, I think that is a better idea than buying new jars!

I had a pack of chicken wings that needed to be used, so I did it the easy way.
Took off the wing tips with a heavy cleaver. That was fun!
Washed the wings, (I always do that) drained them, and put them in a bowl.
Sprinkled with a vegetable stock powder (I had a Turkish one with garlic) and drizzled on olive oil.
Mixed well until covered.
Spread them out on a baking tray and baked at around 170C/350F until done!
I am now trying not to eat them all...

I love this vegetable. Or fruit. Whatever you want to call it! I love Caribbean food, and this is one of my favourite dishes.
1 plantain, the darker it is the more ripe and sweet it is.
1 tsp butter
2 tbs vegetable oil
Peel the plantain and cut into 1cm thick diagonal slices.
Heat the butter and the oil together.
When foaming add the plantain and fry on one side until dark golden, then turn and do the other side.
WATCH THE SLICES as they will burn fast.
When dark gold on both sides serve!
Very good cold with a sprinkle of salt.![]()
