Hi,
It has been quite sticky summer in my city so my appetite has been drop...
So-men is a popular noodle in my country especially in summer season.

Today, I have made cold so-men noodle with some garnishes to have.

Yuzu pepper paste ( foie you would like it),Yuzu zest, green onion, myouga ( summer veg), grated ginger with So-men Tsu-yu (dipping so-men noodle soup).

" Jaco Gohan " ( seasoned dried baby fish rice )

Jaco Gohan is made from steamed rice and sesoned baby fish.

I am not sure to buy seasoned dried baby fish out side of Japan...maybe you can find it out from asian foodstuff. It is kind of smoked foods.

There are some kind of flavours. This time i have chosen soy sanshow flavour for serve. Just add jaco into the steamed rice and mix well. easy peasy!

Octopus (TACO) with " KINOME MISO" Dressing

KINOME MISO is the very traditional dressing in Japan. it tastes very distinctive!

It is made from Sanshow leaves, white miso, vineger, sake, yolk, and sugar.

3 tbs white miso
2 tbp vineger
1 tbs sake
1 yolk
1 tbs suger
sanshow leaves

Grate sanshow leaves by using pestle. Basically, we use the " SURIBACHI" which is similar to marble pestle. But my kicthen doesnt have one so I just chopped them up tongue

Heat very simmers all above seasonings except sanshow paste. Mix well until smooth. Leave it till cool. Add the sanshow paste and whisk.

This dressing can be used for anything you like!
