Economical Supper Dish.

Here's an easy supper dish I made. I'm unsure about the protocols when using other peoples recipes, so I won't give it in full.

Basically it consists of red onions, roughly chopped, seasoned with thyme and slowly softened in oil. This is placed in an oven proof dish, sprinkled with grated cheese. Make a savoury scone dough, (you can add cheese to this too if you like) then roll this out gently and lay over the cheesy onion mixture and bake. Turn out onto a plate. onions uppermost, and serve. The onions are deliciously sweet and the scone base makes it ideal comfort food for a cold wintery evening supper.

Courgette and Cocoa Muffins

They were a little strange...I expected the courgette to just make them moist, but even after nearly 40 mins in the oven they still seemed kinda soggyroll and they were sort of...well...vegetable-y Maybe I just did something wrong, I dunno. I still ate them all!! (Not all at once!!wink)

Finally got around to trying out this recipe from the 'Ministry'. I loved the lemon juice added to the creme fraiche...will try to use lemons a bit more often in my cooking.  I was in a hurry and couldn't find pancetta in the supermarket, so used something called smoked bacon 'lardons', and the end result was very tasty.

Part of the reason for making this was to enthuse my 4yr old to eat more varied foods. She loves Jamie ever since we watched 'Jamie at Home'...but alas...more work is needed, she still picked the 'bits' out. So I had to eat her helping...
