Made this last week, but this time I put a few more vegies in and added bacon...

Now, it's freezing down here in Oz and I love this nice and hot... recipe will do 2 people.
Ingredients:
300 gms chicken breast chopped and cooked
garlic
1 lt chicken stock
1 cup water
3/4 cup Aborio rice
1/4 cup lemon juice
snip of chives
ground pepper
1/2 cup parmesan
Method:
Bring stock and water to the boil.
Meanwhile, chop chicken breast into small chunks and cook with some garlic. Put aside.
When stock and water comes to boil, add rice, reduce heat and simmer for 20 minutes, stirring most of the time.
After 20 minutes, add cooked chicken, chives, pepper and lemon juice.
Continue to simmer, stirring regularly, until nearly all liquid has been absorbed - but is still moist.
Then, turn off heat, stir in parmesan and serve immediately.

For all who know me and my love of mint Tim Tams.... OH went out and bought me this mug the other day cool so I now have a Tim Tam mug to have my coffee break at home while I eat a Tim Tam or 3 while enjoying it... lollolwhistle
