I live with my teenage daughter in a friendly block of 8 flats in inner NE Melbourne. We have a garden in pots at the front door and two compost bins that I count as pets!

Yummy Fried Rice for Lunch!

I had to get up from eating this and come and take a photo because it was SO delicious!
It is a basic fried rice, but what made it a bit special was the Pepper and Coriander Paste on the eggplant.
I made the paste when I had a bunch of coriander I wasn't using up quickly enough. I popped it in the freezer. Yesterday I knew I had to do something with the two beautiful eggplants my sister brought me from her farm. So I chopped them up and marinated them in the thawed C and P Paste and then braised them in a little oil.
Today I added them to the red pepper, corn, beet leaves and garlic, chopped peanuts and ofcourse the rice. Plus a little szichuan pepper and salt! It was SO yum!
Here is the recipe (from Meera Blackley)
PEPPER AND CORIANDER PASTE
1 tbsp chopped garlic crushed to a paste with
2 tsp salt
2 tbsp whole black pepper corns roasted and coarsely crushed
2 cups of clean finely chopped coriander, including roots
2 tbsp lemon juice
Mix all together. My notes say it lasts for 3 -4 months in a clean dry jar in the fridge, but I froze it in a couple of portions.
Note: if making in a blender (spice grinder) reduce the pepper to 1 tbsp as it is hotter when finely ground than when coarsely crushed.

I made them!
I did plan to make them today (about three weeks after they were our Weekly Cooking Challenge). I bought the ricotta yesterday. I re watched the video http://video.about.com/easteuropeanfood … ierogi.htm and divided the process into small steps noticing whether I could take a long rest in between or not (life with a chronic illness).
I used my food processor to make the dough (and it took an extra 1/2 cup of flour to come together well) and my pasta machine to roll the dough out.
This photo does show that I burnt the butter they were fried in (luckily paper towel got a lot of the black off!
) And maybe I didn't quite boil them enough first.
But they were a real treat!
So much so that an hour later I went and cooked another batch, AND this time I got them so perfect! Cooked beautifully and they tasted magic.
I am so full now!
And I have another eight for tomorrow (breakfast maybe!
)
I wish I could have taken a photo of the perfect ones, but the photo here was the last before the batteries died.
They were an absolute mid way between Chinese pot stickers and some lovely ravioli.
I will make them again!
Pasta and Pesto

Just the things when there is basil in the garden and a pestle and mortar in the kitchen! To add to the delight: my friend had given me garlic she grew, and some are very small, with the cloves the perfect size for one serve of pesto.
Plus a few of my cherry tomatoes to top it off!

Stuffed with fresh corn kernels, finely grated carrot, finely sliced celery, a bit of milk and butter and plenty of seasoning. Grated cheese on top. Yum. Crispy skins.
