courgette recipes
I would like to share with anybody, who is interested in 2 courgette recipes.
The first one is a recipe from my native country - Russia, whereas the second one is Italian.
1. Courgette pyramids
Ingredients:
courgettes
mince (half beef, half pork)
tomatoes
grated cheese (any available but the one melts well - Gouda or Cheddar are OK)
natural yoghurt (some people substitute it with mayonnaise)
salt and pepper
1.Cut courgettes into circles that are 2 cm thick, salt them.
2.Cut tomatoes into circles approximately 1 cm thick.
3.Put your mixture of mince types ina bowl, add salt and black pepper (I also add white pepper but I do not think that it is to be inserted in compliance with an authentic recipe). Add a bit of water to make the mince be softer (about 100-150 gr per 1 kilo of mince). Mix the mince with wet hands. Make cutlets out of it. The cutlets are to be of the same form as your courgette circles.
4. Pour a bit of oil on a baking tray (the point is that traditionally in Russia we put sunflower oil, but I prefer olive oil to it). Put all your courgette circles on it. Put one cutlet on each courgette circle. Crown each of the will-be pyramid with a tomato circle.
5.Put your 'towers' into the oven that has been preheated in advance up to 200 degrees. Let them bake for about 15 minutes.
6. Take the baking tray out of the oven in 15-20 minutes. Dredge each of your pyramids with cheese. The last but not the least, put a small spoon with rich yoghurt on each creation. The yoghurt is to be distributed all over the top of each pyramid so that it can cover all the cheese. Bake them 10 minutes more until ready!

2. Courgette flowers.
I have come across this recipe in... Russian Vogue, I guess...
Historically, in Italy courgette inflorescences used to be the food of poor people. Ironically, nowadays they are considered to be the part and parcel of haute couture cuisine and are served in the best restaurants all over the world.
The process of making 'Courgette flowers' is very simple. You just need courgette inflorescences,1-2 eggs, some wheat flower and olive oil for frying.
Therefore, you whisk the eggs, salt the mixture, put the 'flowers' first in the mixture,then in the flour and on a frying pan in the long run.
