Living in Sweden the conditions for growing your own food isn´t as good as in the UK, but I´m dreaming of building a new house in the countryside on a ground of 6000sqmeters. Now I have only 500 so the possibilitys will be much better. I may also have my own hens and chickens.Elderflower champagne
My recipe of elderflowerchampagne.
You need a bucket, clean of course, buy a new one for safety.
Mix in it:
14 pints water
2.2 pounds sugar
2 lemons in thin slices
3,5 fluid ounces apple vinegar
10 elderflowers
Put the bucket in the sun, in a window with most sun during the day, for 3 days
Stir once a day
Pour into bottles with patent stopper.
Let the bottles stand opened in the sun for 2 days, the champagne may overflow, that is ok/good.
Shut the bottles and put them in a cool place, the refrigerator for ex.
Wait one week before opening.
Unopened bottles can be saved for more than one year.
I´ve had bottles for 2 years and the champagne tasted even more.

Elderflower cheesecake
Danny put a picture of Elderflower cordial on his blog, and I put in my recipe of the syrup I make every year.
Here is a recipe of cheesecake I make every year in august at the kindergarten I work in , when we have a welcome party for the parents.
You need a springform
Put 6-8 crushed digestives in the bottom.
Whisk
3 eggyolks
1/4 pint sugar
add
7 ounces Philadelphiacheese
and stir
In another bowl
whisk
3 eggwhites
in a third bowl
whisk
½ pint cream 40%
stir in 1 tbs elderflower syrup
into the cream
stir gently the three bowls together
pour it into the springform and put it in the freezer for 4 hours or more
Make elderflowerjelly
almost ½ pint elderflower syrup
warm it up and add
4 leafs gelatin or 2 teaspoons powder
cool it down and when its still pouring
pour it over the cheescake and put it back to the freezer until 30 min before you serve it.
Delicious!
Harvestbag- in swedish-Skördekassen
Because I don´t have a big garden, I´m not able to grow everything I like, I prescribe to a thing called Skördekassen - a harvestbag.
From week25 to 39, the end of september I´m able to get a bag every Wednesday to pick up at my health food shop.
The bag contains different things every week, it´s a surprise, due to what they harvest that week. It also contains refined products.
For ex. this week I got rhubarb, fresh red onions, swedish cheesecake , a plant lemonbasil, eggs and tomatoes. Lovely!
Dreamhack
Tomorrow I will drive my boys Ludvig and Vilhelm to Jönköping, where they will join the world biggest LAN (local area network) Dreamhack for 3 days and nights.
