This was inspired by my elder son's purchase at London's Borough Market when we stayed with him for the Canada v US hockey final, but mine's not three quid a loaf. This one is 25% whole oats, 25% strong white, 25% wholemeal and 25 % buckwheat. The oats and strong white are mandatory, but the other half can be any combination of wheat, rye, cornmeal or whatever you like. It has an initial sponge method fermentation followed by the addition of a tbsp of honey with the rest of the water before mixing; the oats require quite a lot more water than the usual 5:3 ratio for wheat flour to water, but this results in a nice light dough and subsequent crumb structure. Proving time must be one hour on the dot, as I have found to my cost that it quickly deflates if left longer.
