I am a Filipino artist who was born and raised in Manila. Currently based in Vietnam as the Head of Creative Group in a local Ad agency. I am a lover of life and a lover of Australia. I am making the most out of what I have now by doing and learning the things I love. I am into painting, physical activities like running and kick boxing, whistling the harmonica, traveling, beach bumming, photography and of course cooking almost everyday! If I have to claim one thing in my life and that is, I am Jamie Oliver's number one fan in the Philippines & Vietnam. In that claim I am 100% sure. I admire Jamie Oliver so much that's why whatever he does, I try to do it in my own little way. I know I am going to meet him one day :-)

Drunken Pork with Rainbow Capsicum Rice

This combination of the pork and the capsicum rice is purely experimental but did a good result. And I am truly proud of it! If you are not a rice eater and doesn't eat spicy food you will surprisingly beg to taste this combo!

Ginger Olive Curry Rice

Hello dancing lemons and bouncing cinnamon!
I just arrived from my Cambodia trip the other week. It was a tiring trip crossing the border from Ho Chi Minh to Phnom Penh. It took me and my friend 6 hours to go to the city of Phnom Penh. Then another 6 hours going o Siem Reap to witness the Angkor Wat. That's a long story to tell. I have an upcoming blog for that definitely. One thing I learned about Cambodia is: There's no such thing as Cambodian dishes. I didn't enjoy my food trip there so I was really starving for a good food since I came back to Saigon.
So last Saturday I whipped up this amazing rice dish inspired by Jamie Oliver's Turmeric Rice. I read that recipe from his Ministry of Food book. So my paellera turned out to be my default pan when I cook rice dishes. This rice is so good when you eat with my Chicken Kebab recipe or my Morrocan chicken recipe. In the meantime lemme share you guys this recent concoction I have.

Aussie Day in Saigon

G'day Mates!
It's been a week since I last cooked and celebrated Ozzie Day. I did some Pesto Fusilli Pasta, English Onion Soup and of course Barbies! I marinated my pork with Coopers Stout Beer and Vanilla Ice cream. It tasted Yummy!

Chicken Curry Rice ala Paella

Before I headed for my holiday in Manila, I did some cooking stints for my good friends here in Saigon. I cooked Paella for Muay Thai friends after not cooking the dish for almost two years. I also cooked Crepe Dome Chocolate Cake for the first time but I do not have a nice photo for me to post it here. But one of my specialties which is Chicken Curry Rice was a winner during the Christmas dinner with fellow Filipinos here in Saigon. And I am happy to share the photo and the recipe in Foodwise here in Jamie Oliver website...

Chili Chicken Curry

May this year be filled with spices that will bring certain meaning to each of us.
This is my very own Chicken Curry filled with Chili. Some mistaken this dish to be very spicy, but it's not. Mild spice and nice aroma because of the Wansoy leaves.
