i love the environment and nature and love to cook! people say im really good at cooking, however i really just throw a bunch of stuff together!!! confidence is key to everything in life, so i believe in not giving up and simply being happy. so go on, smile at someone:)

Being only 19 and young, i have big plans!! and one of those big plans is to make people aware of the damage to the planet
TAnd today was an eye opener for me. First of this morning i picked up all the material required to grow trees.... That is i signed up to a program called Trees for Life, where people volunteer to grow native plants from seeds to then give to farmers. i signed up months ago and felt like i wasnt achieving anything. but seeing the boxes, the soil, the sweet old ladies trying to get me to buy tools and stuff at the depot made it real and so rewarding. One of the guys there was so happy that a young person was actually caring and that there needs to be more. i tried to get my friends involved, but eh, they weren't interested. Which is fare enough. its hard work!!
Then i went to the first ever Vegan festival near where i live. i am not vegan, not even a vegetarian, but the points they make really changed my views and opinions. I thought (and i appologise if i offend ANYONE) that vegans were stuck up, crusty hippies that thought they knew everything and demanded everyone became vegan themselves, or be damned to an eternity of sin. But, the projects of animal cruelty was not the greatest topic, but rather global warming and the effects on the planet cattle have for example with methane etc. there were recycling programs, great cooking demonstrations, even signed a petition to demand genetically modified foods be labelled appropriately![]()
These are the issues i am concerned about. I thought nobody cared and i would get wound up and upset. i became depressed even. But seeing all of that today let me know that people DO care, and that they DO want to make a difference. its a shame there are many many people in the world who are driven by fortune and how much they are worth. that includes food chains and supermarkets and food companies that claim to care, but still make the junk, all because of a few $$$.
With my rantings, i guess what i am trying to say is that, i HAVE found happiness in eco cooking, voluneering and taking time to see the way other people choose to live their lives, be it vegetarian or vegan. We cannot be so judgemental, for food is food and food is fuel and living that way is a lot better than dining at maccas every day.

Coeliac Disease brings on a new life

I was diagnosed with coeliac disease about a month ago.
it all happened when i moved out and bread, pasta and baked beans (along with fruit and veg) became a main part of my diet as was a cheap alternative.
my low energy, iron deficient, frail and thin body had reached its peak where i was bloated and constipated and i felt like dying as i was constantly tired. i developed a stress fracture in my toe as i was well on my way to developing osteoperosis.....
going gluten free was a difficult task. i gave up chocolate, lollies and soft drink alongside chips and junk in general- at my own will. not much effort there. But, now i know i CANT have that stuff, i want it and crave it. for 2 weeks i gorged on chips and lollies- all making me sick. and it doesnt help that my boyfriend LOVES pasta and bread... now my body is getting better. i have energy and strength.
i love fruit and vegetables. i always have and coming up with recipes that does not include wheat, rye, oats and many sauces... it allows for so much creativity yet within restrictive guidelines. and going to the local markets to look at the gluten free goodies and fresh foods on offer is such a simple delight i enjoy! protecting the environment is one of my passions, so going as local as possible is great.
i know coeliac disease is common, alongside many other intolerances, so perhaps Jamie needs to bring out a book on the topic! it may open people's mind to so many alternatives. it really is a healthy lifestyle
