I'm Victoria, 34 years old. I live in a small town in the middle of Sweden with my husband, our son Edvin (2 years old) and two lovely dogs. I really enjoy cooking and Jamie has been my favourite for several years. My favourite food comes from the Italian and the Indian kitchen.

My mother came to visit us and she brought blackberries from her garden. She lives further south in Sweden, and blackberries are quite common where she lives.
I got a blackberry plant for my birthday last year, and it actually survived the winter despite very cold temperatures (around -13 Fahrenheit/-25 Celcius). Unfortunately I haven't seen any berries yet in my garden, perhaps the climate up here is too cold during summer time.
Anyway, this is a blackberry salad made from the berries that my mom brought:
Mixed salad leaves, figs, blackberries, prosciutto ham and honeydew melon. I really like the sweetness of the fruit combined with the saltyness of the ham.![]()

I made these foil packages for the BBQ the other night, and they turned out great! I boiled new potatoes and cut them in quarters. I put these in the bottom of the foil package. Then, I added courgettes (the first ones from our garden this summer), sweet pepper , haricot beans (also from our garden) and asparagus. On top of the veggies I put a piece of salmon and seasoned with S & P. I chopped dill and put on top of the fish and vegetables. Before I wrapped the foil packages and put them on the BBQ, I added butter mixed with chopped red chillies and parsley.
When we unwrapped the packages, the butter had melted over the salmon, the veggies and the potatoes. Yum! I really recommend trying this, it was very easy! ![]()

Perfect summer lunch! I filled the omelette with smoked salmon, chopped dill and chives, mange-tout peas and tomates, and topped with lemon, creme fraiche and roe.

This is a real favourite, a salad that I often serve together with grilled meat during summer time. I might have written about it before, but it is so much worth mentioning again!
I scrub new potatoes and boil them in slightly salted water. Then, I chop carrots, red onion (I used shallots this time), spring onion, garlic and asparagus. I also add kalamata olives, pumkin seeds, pine nut seeds, or whatever seeds that I have available. I heat up some oil in a frying pan and quickly fry the veggies. When the potatoes are ready, I cut them in halves. When the potatoes are still warm, I mix all the veggies in a bowl, together with a simple dressing.
Salad dressing: (serves 4 people)
1/4 cup of olive oil
1 tsp balsamic vinegar
1tsp honey
1 tsp chinese soy sauce
pepper
The salad should be served still warm. ![]()
