Millionaires Shortbread - so naughty

Thought I'd treat the family to a very naughty Millionaires Shortbread.  This is a family favourite.  Me personally? Forget the shortbread, just me the caramel and choc on their own. big_smile

MILLIONAIRES SHORTBREAD
Shortbread
150g (5oz) butter
75g (3oz) caster sugar
225g (8oz) plain flour
Beat the butter and the sugar together until pale and creamy. Sift in the flour and beat until combined (if using a food processor, whiz the ingredients until they're just combined).
Tip the mixture into an 18cm (7in) square tin, lined with baking parchment.  Press lightly into the tin and prick all over with a fork. Bake for 30-35 mins at 180°C, 350°F or gas 4 until it turns a pale biscuit colour. Cool in the tin, making it easier to pour over the caramel sauce later.
Caramel Sauce
150g (5½ oz) butter
150g (5½ oz) dark brown soft sugar
397g can Carnation Condensed Milk (www.carnation.co.uk)
Place the butter and sugar into a non-stick pan and stir over a medium heat until the butter melts and the sugar dissolves. To make a golden caramel, add the condensed milk, stirring continuously, until the first bubbles appear on the surface. Remove from the heat as soon as it comes to the boil.
Spread the caramel evenly over the base and then cool and chill for about half an hour.
Topping
250g (9oz) dark or milk chocolate, melted
Pour the melted chocolate over the caramel, smoothing to the edges. When the chocolate has hardened a little, cut into squares

This tastes  like a Bakewell Tart but with a cake base instead of pastry. It's delicious.  Maybe I'll tinker with the recipe and add a few raspberries next time.

Why don't they like nuts like I do?

This is my banana & pecan bread/cake.  I'm the only one who thinks it's delicious.  It’s bananery, very moist and, most importantly, it also has nuts.  Not good for the figure, I know, but I adore those crunchy things.  My children wanted choc chips and my husband wanted sultanas.  No matter.  All the more for me!

Bruges, Belgium

Hubby and I took advantage of a great P & O Ferries offer (http://www.moneysavingexpert.com/deals/ … is-tickets) and drove to pretty Bruges in Belgium early yesterday morning.  It's well worth a visit.  Returned to Calais, France, late afternoon via Ostend and Dunkerque to catch the ferry back to Dover in Kent. 

No more day trips for  us. Back to work next week  urrgh!

Sandringham Estate

Yesterday hubby & I visited the Queen's private house and estate in Sandringham, Norfolk. The Queen wasn't home so we'll hopefully catch her next time. Perhaps for tea and homemade scones.
