Wednesday lunch for the posse

On Wednesdays, I cook lunch for about 30plus, at the meditation retreat site that also live in.
Since we are in California, even the Italian inspired dishes have that free style slant.
Today, no different.

I use organic brown rice past, fresh green asparagus,
arugula, yes that spring weed our president got a bad rep about being a snob...
and what I call: chopped Pesto. Which essentially is all Basil pesto ingredients, chopped, not blended in a machine.
Oh, yes, lemon and lime zest lifted the whole dish.

The soup was a mix of currently available veggies with chestnut lima beans, which I also planted today, in hopes to have a harvest in fall before I visit Dawn in Austria.

Boy, 75 people showed up ravenous...I planned for 50...the magic of keeping the spaghetti water going worked. I used organic brown rice pasta because of so many kids being allergic to wheat and they Loved it.
Here in Cali we have Trader Joe's a natural foods purveyor who has great alternative products and this pasta rocks for being made from brown rice.
Anyways, I made a rustic tomato sauce with capers and lots of wine...I know, kids ate it, but they really loved.
I'll try better next time to take photos...here's one of me starting the soup with olive oil and onions.

My daughter Dawn Rigoni inspired me to join Jamie Oliver's tribe of foodies and nature lovers. Here I am, happy as a clam.
Tonight I'll be cooking for 50 plus people all ages in the yoga retreat site that I live and work in.
I'll be applying all the principles of proper cooking, as coined by Jamie and picked up by Dawn...really happy to be here with Ya'llsmile
