I'm married, my husband supports me a lot in my culinary experiments.
I love cooking almost since childhood. I'm lucky to have a wonderful family where everybody cooks pretty well. We love family dinners and I'm always trying to cook something new for my family and friends.
I like travelling and every time I try to bring some new recipes from a trip. I'm in love with Mediterranian cuisine - Spanish, Italian, Greek, Turkish...
In food I like simplisity of recipes and clear taste.
I always try to cook healthy food.

Aubergine Rolls with Cheese and Walnut

My guests usually enjoy this starter.
2 long aubergines
300g soft ricotta or feta cheese (in this case don't add salt)
parsley and dill, chopped
1/4 tsp pepper
1/2 tsp salt
1/2 cup walnuts, chopped
Cut the aubergines into long tongue-like pieces 0,5 sm thick. Sprinkle with salt and leave for 10 min.
Grill them with a little olive oil for 10 min.
Mix all the ingredients for the stuffing. Spread on the aubergines and roll them.
Chocolate Cookies

65g butter
70g sugar
1 egg
70g flour
4 tb sp cocoa
1 tsp baking powder
1/4 tsp cayenne pepper
1/2 cup white or dark chocolate chips
1/4 tsp vanilla extract
Beat the egg, add soft butter, sugar.
mix separately flour, cocoa , baking powder, pepper, vanilla.
Mix all the ingredients, add chocolate chips.
Spread the mix in the tray, the level should be approx. 0,6 sm thick, bake 10-12 min.
Cut the warm cookies in the tray.
Black Forest Cheesecake. Very Light! No Baking:)

I love desserts but want to stay slim. For me this is the ideal variant.You can eat it any time without feeling guilty. I use 0% fat quark for this dessert.
1 thin sponge cake
1 kg low fat cream cheese (quark)
30 g gelatine
1 egg
100g sugar
vanilla extract
800 g canned cherries
20 cherries and dark chocolate for decoration
Put gelatine granulas in 1 cup of water. Leave for 40 min.
Mix cheese, egg yolk, sugar, vanila.
Bring the gelatine mix to the boil and pour into the filling.
Cool the mix for 20-30 minutes till it starts setting.
Add cherries and stir gently.
Beat up egg whites and add to the mix.
Pour the mix into 23 sm springform pan with the base.
After 1,5 hours decorate the cake.
Cool in the fridge for at least 3 hours
NB: it's also very good with strawberries!
Jamie's Ricotta and Mascarpone Cheesecake

On my Birthday my husband gave me Jamie's Kitchen. I was very happy! This was the first thing from the book I cooked.
I decorated it with oranges.
Here is the recipe:
500g shortcrust pastry
250g ricotta
250g mascarpone
zest of 3 oranges
1/2 tsp vanilla extract
2 eggs (separate whites and yolks)
100g powdered sugar
Preheat the oven to 190°C/375°F/gas 5. Roll out the pastry until ½cm thick and use it to line a 24cm tart tin. Leave in the freezer to rest for at least 20 minutes, or longer if you can.
Bake the pastry blind for around 10 minutes in the preheated oven, then remove, set aside, and reduce the oven temperature to 170°C/325°F/gas 3.
Mix ricotta, mascarpone, orange zest, vanilla extract and egg yolks in food processor. Beat the egg whites well and add to the mix.
Put the filling into the base and bake for 40-45 min.
Decorate with pilled oranges.
