Well where to start. My 4 lovely boys are more important to me than anything. I love to grow stuff, not always successfully but anyway I try. If we had a bigger house/garden I'd love some dogs, cats, chickens all that lovely good life stuff. But I'm still fond of my comforts. I love to cook and experiment with new ingredients and tastes. That's about it for now. Talk again soon.

Poor Sad Tomatoes

My poor tomato plants are just so unhappy in this awful weather, they don't look like they will recover any time soon. So it looks like very few home grown tomatoes this year.I grow mine outdoors, having started them on windowsill in kitchen. I usually have great results, for friends and for pickles and chutneys. I think not for 2008. I must investigate and do some research on sunlamps for tom plants!!!!!!!

Freezer Jam

This is my Mam's recipe which she got from a friend of hers 47 years ago shortly after they got married. They both still use this method as well as the conventional method.
Crush 700 grams of fruit and mix with 900 grams of caster sugar and 2 tablespoons of fresh lemon juice.
Now giving it an occasional stir, leave it for about 2 hours give or take until the sugar is dissolved.
Then add half a bottle of Certo or your own pectin and stir continuously for about 3 minutes.
Pour into freezer proof containers, leaving some room for expansion while freezing.
Now let it stand for 24 hours, it should be set by then.
Seal the containers and put into the freezer.
Once defrosted this needs to live in the fridge, make smallish batches, unless you've loads of freezer space, use smallish containers as it will not keep as long as cooked jam.

I've done this with strawberries this year and intend to use it with wild blackberries over the coming weeks. It is almost like a syrup, and retains the fresh taste of the fruit. Scrumptious over home made vanilla ice cream. YUM

Oh sorry, Certo contains 250 mls per bottle. I'll look up the measurements for home made pectin if anyone needs it.

Dull today but dry.

Dull today but dry, school holidays almost over. The boys go back to school on thurs, and my baby starts school  sad . I hate them going back to school,  I get so lonesome. Anyway we're off to the butcher, gotta get a walk in, dunno what we'll get for dinner yet, we'll see what looks good when we get there. Might even bring the bikes, feels like it might rain later so let's make the best of what we've got. smile

Wet and windy

Well there were some leftovers which the lads polished off for lunch. Now to think of dinner. I think my 7 year old wants to make his own burgers. We've done it successfully before so that might be a hit. He has a cookbook by Shrek, that's a big green ogre for those of you without small kids. Good stuff in it and it's a hit in our house.

Pizza for dinner

Hi Everyone,
Thanks for the encouragement. I am mooching around here trying to get a feel for this while my pizza dough proves. I use Jamie's recipe from Italy book. My kids love it as they can make their owm favorite toppings. Never much in the line of leftovers in our house. Pizza a great way to get kids to eat veg or whatever they are usually slow to accept. One little friend who comes to our house never eats tomatoes, cheese or salami in his own house, but can't get enough here, i think it's because he has control over what goes on his own personal pizza. Luckily my four are all good eaters, like mum and dad, one isn't good with red meat but eats fish, eggs, fruit and veg so i don't worry too much about it. I'm a great believer in not worrying too much if i can help it. Doesn't always work but their you go.
