I am a Filipino artist who was born and raised in Manila. Currently based in Vietnam as the Head of Creative Group in a local Ad agency. I am a lover of life and a lover of Australia. I am making the most out of what I have now by doing and learning the things I love. I am into painting, physical activities like running and kick boxing, whistling the harmonica, traveling, beach bumming, photography and of course cooking almost everyday! If I have to claim one thing in my life and that is, I am Jamie Oliver's number one fan in the Philippines & Vietnam. In that claim I am 100% sure. I admire Jamie Oliver so much that's why whatever he does, I try to do it in my own little way. I know I am going to meet him one day :-)

Yoghurt Kani Salad

When you're stressed out at the end of a long day work, all you need is a comfort food. So  I made my own version of Kani Salad. Never thought it was this easy to prepare. This will satisfy your craving without the guilt because it's very light even if you eat a lot. The other week I went to this place called little Tokyo here in Manila, I love exploring supermarkets. Basically I hang around in places like that as compare to malls. So when I found this Japanese mayo called "Kewpie," what came to my mind right away was Kani Salad. To make my Kani Salad dressing more interesting, I mixed yoghurt with mayo and add paprika for little spice. Then the combination of fresh cucumber, sweet mangoes and yummy crab meat made this salad to die for!

Penang Chicken Skewers

When a boring day attacks, there's no other way to kill it but prepare something delish and the first thing to do is open your fridge. Then there goes my concoction, Penang Chicken Skewers! Indian and Malaysian spices plus the famous white wine from Paris is one great fusion that led me create an exciting new dish. Along with the basil rice and ice cold water with lime, this dish made it awesome. Light but very flavorful. Hope you like it.

To prepare:
Marinade chicken breast cutlets with curry powder, paprika and cumin. Add salt, pepper and lime. Lastly put a dash of sugar. Set aside for 2-5 hour in the fridge. For the sauce, heat medium pan with butter add diluted coconut milk. Simmer it for 15 minutes. Add white wine and simmer it again for 10 minutes. Add sugar, curry powder and cumin. Simmer until thick then set aside. Get the chicken from the fridge and place the cutlets in skewers. Heat grilling pan and grill chicken. Do not overcooked. Serve with the sauce.

Devil Prawn Bruschettas

As we all know bruschettas are from Italy, but one day when I came back from my Thailand trip I decided to put a twist on my regular bruschettas. I hurriedly bought some French bread from the grocery and sliced it when I got home. Got some butter from my fridge and melted it on my pan. Sauteed garlic, mushroom, prawns and chilis. Add some salt, pepper and paprika. Since Thailand fever was still with me at that time, I hurriedly prepared my Thai Milk tea. And wow! That made my day. What a perfect combination!

Lettuce-Grape-Calamari Trio

Last September 2007, A famous food magazine here in Manila conducted a cooking competition. The magazine is called YUMMY and the contest was called "The COOK-OFF." I was invited to cook and compete on stage one on one under the food blogger category. The experience was like the iron chef which is like what we watch on TV. I won the competition. It was Jamie's book who became my inspiration to come up with this own concoction of mine. I love raddichio and arugula which I often read on his books, so I decided to make it part of the recipe. Too bard it was hardly available here in my country. So I decided to replace it with lettuce.

Thank you so much Jamie with those inspiring books. I really want to complete my collection. And still dream that one day I'll meet you.

To my fellow blogger, here is the winning recipe:


You will need one pack mixed greens like lettuce, arugula, rocket and even raddichio. Seedless grapes, squid rings marinated with salt & pepper with kepap manis are also needed. Prepare mayonnaise then mix it with a little balsamic vinegar, milk, extra virgin olive oil, salt and pepper for the dressing then set aside. Prepare a huge salad bowl then arrange the mixed greens then top it with grapes then set aside. Heat med pan in high temperature with butter then saute the marinated squid for few minutes. When cooked, place it on top of your salad bowl and pour the right amount of dressing and serve.

STRAWBERRY FIELDS

I heart Strawberries.

But my strawberries from La, Trinidad Benguet failed to taste as sweet as it used to be. My partner in life gave me strawberries last Christmas as he always do, although he broke my heart couple of months ago. He's doing stuff for us to be ok again. But still needs further efforts. So I just decided to make frozen strawberry cake with mangoes from the strawberries He gave me. I let his parents and siblings taste it. Aside from that I cooked for them a dinner feast and everyone seems to empty their plates.

Oh I hope my heart will be ok again and hopefully will find love again soon. So Joanie can do more cooking...
