SPICY Extra Virgin Olive Oil

Many people don’t know how to prepare their own home made spicy - aromatic bottle of olive oil. Its easy and you can prepare it in a short time. The result is amazing and delicious. You can have your own “ gourmet” oil to cook your food….
These ingredients are giving their aromas in the olive oil, so you can use this oil to cook a pasta dish , a nice beef dish, or any other dish you wish. Remember ….leave these ingredients at least 2 weeks in the bottle. Then pick them out, of the bottle.  My advice is to make not big portions of this oil, at a time. Just  a small bottle every time.

Well I think that this dish is not only among the most famous in Arab people, but to many people around the world as well.Grind  all the ingredients(chick peas, onion and parsley) in a wide utensil. Add salt pepper and cumin. If your mixture is fluid add some flour to make it more robust.
Let all of these ingredients in a refrigerator for about an hour.
After you have let them in the refrigerator fry them in medium temperature.
Give them a figure, of a small but flat meat ball, by pressing them in the top during the formation phase.
Beware don’t overheat olive oil, because high temperature destroys its precious substances.
You can serve(see the photo) them with a spicy sauce, Arab bread and well chopped vegetables.
It’s a recipe that my Veggie friends will adore.

Fried mushrooms

Choop the mushrooms and the onion. Lay them in a bowl and add parsley,salt and pepper. Mix them well and try to make a mixture with no water remains. After you have mixed them well add 2-3 tablespoons of flour and create balls like the meatballs but more wide and flat(see the photo).
Fry them in a wide pan with olive oil in medium temperature.
I think you will find this recipe very tasty. Actually its an old Greek -Macedonian recipe that our ancestors used to cook especially in winter months. Drink a glass of fine Greek OYZO with rocks.thumbsup
