The cooked whole Ocean trout served with minted new potatoes, steamed asparagus with lemon, flavoured butter and lemon wedges.
The fish was perfectly cooked and lovely and moist and very tasty ![]()

I then sliced pieces of the flavoured butter and put some inside the fish and some onto the top of the fish.
I then rolled the fish into a foil parcel and baked in the oven @ 150C for 30 minutes.

I sprayed a large sheet of foil with olive oil and placed some fesh sage and italian parsley on the foil.
I then layed the fish on top, seasoned inside and out with salt and pepper.
Then I added a succession of red onion and lemon slices.

Mr three kindly helped out by making the flavoured butter in the mortar and pestle.
2 cloves of chopped garlic, zest of a lemon and a handful of fresh lemonthyme and parsley and two good tablespoons of butter.
All boshed up together and then placed into clingfilm and rolled out into a sausage shape and placed into the fridge to harden.

For the recipe challenge I bought some lovely Ocean trout from my fishmonger.
I used garlic, lemon and fresh herbs for the main flavourings.
