Prawn roll.

Very hot here at the moment so we had  simple prawn and salad rolls for tea last night.

I poached a chicken in some stock with onions, garlic, lemon thyme, sage, chilli and ginger.

I removed the chicken from the bones. Then I took the fat off the cooled broth and added  the chicken, some lime zest and fresh ginger, fresh carrots, baby peas, beans and mushrooms and cooked them until tender. Then  thickened  the dish with  a little cornflour.

Then I mixed an egg yolk and some lime juice and added that to some of the broth and then stirred the whole lot through and finished off the dish with some chopped parsley.
