This recipe was the result of wanting an easy, quick and tasty pudding for friends that unexpectedly showed up on one Easter Week-end.
Ingredients:
1 bunch ripe bananas
250ml fresh cream
200ml castor sugar (or to taste)
1 tsp vanilla essence
handful of glace cherries
handful of marshmallows, cut
lemon juice
2 TBS mayonnaise
Method:
Beat the cream, adding the vanilla, gradually adding the castor sugar until incorporated.
consistency depends on taste, but a thicker consistency works better.
then fold in the rest of the ingredients until well mixed.
Meanwhile cut bananas into rings and pour over just enough lemon juice to cover,
then add to cream-mixture and mix.
keep refrigirated until needed.
Garnish with cut glace cherries and sprigs of fresh mint leaves.
Variation:
You can basically bespoke this with what you have, keeping it realitive of course!
I once made it basically the same as above, but left out the glace cherries and substituded it with botteled Marachino Cherries. Deliscious!
My favourite variation is to leave out the cherries and vanilla, and substitute it with cut Turkish Delight and a few drops of Rosewater. Try it and this will become your "New Turkish Delight" !! ![]()
