Vanilla snap biscuits
Preheat the oven to 180c(355f). Process the butter,sugar and vanilla in a food processor until smooth.Add the flour,egg and yolk and process to form a dough. Knead lightly, wrap in plastic and refrigerate for 30 min. Roll the dough between 2 sheets of non stick baking paper until 5mm (1/4in) thick. Use cookie cutters to cut shapes. Place on baking trays lined with non-stick baking paper. Bake for 10-12 minutes. Cool on wire racks and dust with icing sugar. Store in an airtight container for 1 week. makes 45.
