Saturday Night Pizza

Ever what to do with left over chicken?  Whether it is a breast or a thigh here is an easy fix for a delicious meal.

Dough (pizza or calzone):
1 TB (packet) dry yeast
3 Cups flour
2 TB Chopped basil or your favourite herb (optional)
3 cloves chopped garlic (optional)
2 TB (30ml) olive oil
1 1/4 (240ml) warm water
1/2 teaspoon salt
1/4 teaspoon black pepper

Dissolve yeast in water should foam.  Add basil, oil, garlic, s+p.  Mix in flour 1 cup at a time mix well until it forms a firm but elastic ball.  Oil top of dough.  Cover with a clean tea towel and let rise 1-1 1/2 hours until double.  Press out and cover with your favourite toppings.

The photo above is BBQ chicken pizza.  I make my own bbq sauce and mix in cubed cooked chicken.  Then I top it with  slice onion, romano cheese(quartro fromaggio is even better), slice fresh tomato and green pepper.  Preheat oven to 425F/220C/gasmark 7.  Place pizza in and lower the temperature to 375F/190C/gasmark 5 and bake for 35-45 minutes depending on how crispy you like your pizza.
