Healthy raisin & nut rusks

I was looking for a healthy rusk recipe with limited success. Sunday morning I decided to use my imagination and added the things I enjoy to create my own rusks. It came out wonderful and I will have to make more.

Healthy Raisin & nut Rusks

225g butter
1 cup buttermilk
1 organic egg (jumbo size)
2X250ml cake flour
1X250ml nutty wheat (bran flour)
15ml baking powder
3/4 cups sugar
pinch of salt
½  cup raisins
½ cup pecan nuts – roughly chopped
½  cup muesli
½  cup rolled oats
½ cup sunflower seeds
½ cup coconut

Preheat oven to 180 C.
Butter pan of 20 x 30cm and put aside
Melt butter and allow to cool
Add buttermilk , egg and dry ingredients.
Mix thoroughly and put mixture into pan and spread evenly.
Bake 40 – 45min until golden brown, turn out on a wire rack to cool.
Cut into small pieces and dry out at 70 - 100 C until dry

Store into airtight container
