
Here is a dish that I thought looked pretty that my new trainee and CDP came up with a couple of days ago... I took a [picture with my phone, and just came across it! thought I would share it with you guys... What do you think?
It is Pan seared black pearl scallops served with butternut and chilli veloute, crispy wild rocket and a parmasan crisp...
I think it looks beautiful and I would love to eat it. I love scallops.
We don't get the best scallops here....those look wonderful, and the veloute is not too "smeared". Looks delicious.
Dave that looks great, I would love that as a starter.
I envy that parmesan crisp Dave, we do a similar crispy crepe with unsalted latteria fresh cheese and call it "frico", then turn it still hot on a glass to cool and serve it stuffed with vegs cut in tiny cubes and sautee ............... this is theory for clever chefs, what I do at home is far less precise and good looking
