Runner - its the same icing used on wedding cakes here - it comes ready prepared in a lump - it has to be kneaded smooth and as you can see it can be coloured.

Then it needs to be rolled to the required thickness & stuck on using sugar syrup as a glue.

I rolled it really thin, like pastry as I didnt want it to take over the taste & texture of the biscuits.
