crunchy roast potatoes with garlic oil

this is one of my favourite ways of cooking potatoes..i boil floury potatoes in salted water till almost half cooked then pop them back into the pan and give them a good shake to roughen up the edges...then they get drizzled with a garlic infused olive oil (with S & P and some paprika added) and roasted for about 1 1/4 hours at 190C, till golden and crunchy...lush tongue
