Sicilian Aubergine Salad

similar to the classic 'Caponata' but without the tomato and celery smile ...this salad consists of fried aubergines , olives and capers dressed with olive oil, lemon juice, lemon zest and parsley ...i could quite happily eat a whole bowl of this whistle
