Chicken Eggplant/Aburgine Moussaka/Lasagne Thing

First try at it. Used a simple garlic herb tomato sauce with layers of oven roasted eggplant, ricotta-spinach-mozzarella mixture, pan seared zucchini and chopped BS chicken breast in a sauce of it's own.
Plenty of mozzarella and parmesan here and there.

The wife said it was good the night I made it. The next day she called me at work and said it was great for lunch!

Think I'll try some variations with beans or lentils or something.

I like the name! Aren't layered baked things just wonderful!
