Rabbit - I have been meaning to make a sponge/jam/cream roll thingy for ages - your flat sponge would be perfect for that.
They're living over there, hopefully they'll come back in a year, spending time with them over the last few weeks has made me realise how much I miss them.
I actually have a recipe for gluten free savoardi biscuits but it's kind of spongy when undercooked slightly and we use it for jam roll.
Btw, the flatness may be an oven thing not a recipe thing.
