For the past 6 months, I have restricted my use of starch in my diet to two days a week. In addition, I have substituted honey for refined sugar. The results have been wonderful. My inflammation and pain levels are way down and my energy levels are way up. I found in the summer, this was not an issue. However, here in the harsh Canadian winters I want something more substantial. I have turned to vegetables such as mashed cauliflower and squash to satisfy this need for comfort food.
Mashed Cauliflower is popular with people who eat the Specific Carbohydrate Diet. The recipe I'm offering is simply my variation on an old classic.
I have added this new recipe to my site. It looks like and has the texture of mashed potatoes, but contains no starch at all!

I love mashed cauliflower If I know I've got picky children visitng, I often do a 50/50 mashed potato/cauliflower topping for cottage pie - makes the potato taste buttery too, without having to add any butter
