This is my second ever attempt at making my own Okonomiyaki. The last time I tried was years ago and was a bit of a disaster. This time I followed the recipe in 'A little taste of Japan', but I did have to improvise a bit as could not get all the ingredients.
This is what I have learnt potato starch should not be replaced with Japanese Kuzu Gluten-Free starch thickener. It made the mix very 'stringy', a bit like melted mozarella, and resulted in the pancakes being too dense.
The sauce I made for the top of these was fantastic, and a bit of good mayonnaise added.
I added prawns and salmon to the mix, very tasty!
Hubby loved these Okonomiyaki, but I am not yet satisfied. At some point I will order all the required ingredients from the japanese grocer online and do it properly.
