
I made a kind of ratatouille thrown together to use up veggies in the fridge. I chopped into small slices carrots, and chunks: leek, red and green capsicums (peppers), zucchini (courgette), and tomato. I placed it all in a baking dish and added a jar of tomato passata, some white wine and I excitedly ran out to my herb pots and used my first home grown herbs - some greek oregano (smelt wonderful). And as I have a huge amount of potatoes in the pantry at the moment, I thinly sliced some and placed them in a layer on top, and seasoned with salt and pepper. Then I popped it into a moderately hot oven for about 1 hour, but 15 mins before the end I added some grated parmesan to the top. The house smelt wonderful from the cooking, and it was very tasty. I even convinced Miss 4 to eat some through television bribery and hubby enjoyed it although he really missed meat in it. I served it with steamed sushi rice just because I like that type of rice.
