Allergen Alert: This recipe contains sugar and peanuts.
This is a family favorite at this time of the year. I've only tried making it with peanut butter--maybe I'll try it with some other nut butter, just to see what happens.
MOM'S POTATO CANDY
1 medium potato
Creamy peanut butter
Powdered (confectioner's) sugar
Boil unpeeled potato till fork-tender, then peel while still warm. Mix potato with powdered sugar until a dough is formed. Roll dough out flat and spread peanut butter (but not quite to the edges). Take one side and roll (like a jellyroll). Slice with thread.
ALTERNATE: Roll dough into small balls and make an indentation with your thumb (as you would for filled cookies). Fill indentations with peanut butter.
