As Cyprus is not a producer/consumer of Duck we cannot get fresh so we managed to find some French frozen duck breasts. I checked online and the producer has a website. It looks like they are in the Perigord region and there is a lot of duck farming going on there. Price wise, these were better than some of the duck breasts we have found over here. Size wise they are perfect.
The actual quality of the duck was spot on, it was cooked to perfection. I must remember however to rest it just a few minutes longer. This is definitely something I would do again, though probably with a different sauce.
