Lemon tart (serves 4)
110g rich butter
100g white fine flour
50g icing white sugar
Lightly grease a 2cm-deep, 20cm (base) ovenproof pan. Mix the above ingredients together and press into the base and sides of pan. Bake for 12-15 minutes in the oven, at 200C. Cool off before pouring lemon filling in the pan.
200g white sugar
12-15g white flour
5 tablespoons of lemon juice
Whisk the eggs and the sugar together until well combined. Add flour and lemon juice. Pour the lemon filling in the pan and place in the oven at 175C for 25-30 minutes.
Sprinkle icing sugar over the tart once it has cooled off. Serve with whipped cream or ice cream.
