Mac and Cheese!

you may be wondering why i have decided to blog about simple everyday mac and cheese. well thats just it, its simple and i believe that it should be in every cooks repertoire. It is the best weekday meal especially when you've just come home from work and have to think of something to cook quickly. There really isnt any need for horrible takeways. It is also just so versatile and once youve mastered the basic recipe you can do whatever you like with it. you could i guess in the words of Jamie Oliver, 'pimp' it up. It is very heavy though, so make sure you compliment it with something such as a simple garden salad with a basic vinagerette.

Mac and cheese recipe:

ingredients:
2-3 cups pasta
2 Tbs butter
2 Tbs plain flour
1 cup milk
1/2 cup good cheddar cheese, coarsely grated, plus extra for sprinkling on top
2 Tbs parmesan, finely grated
1 Tbs fresh thyme leaves picked from the stalk
1 clove garlic, finely chopped
olive oil
salt and pepper

method:
1. preheat oven to 200 degrees celcius. grease oven proof baking dish. cook pasta in well salted boiling water according to packet instructions.
2. meanwhile, melt butter in a small saucepan over meduim heat, add garlic and thyme and sweat them off. dont be alarmed when the thyme starts to pop. add the flour and stir until it comes together cook stirring for about 30 seconds. add milk slowly and whisk well until smooth. cook stirring for about 2 minutes to cook off the floury taste. add the parmesan and cheddar and remove from heat.
3.drain the pasta and add to the sauce stir together well. season to taste. add to the baking dish and sprinkle with extra cheddar, drizzle with a good lug of olive oil and bake for 20-30 minutes or until bubbling and golden brown.
