
This picture shows the 3 trays of things needed to prepare the main course .. rabbit loins , wild mushrooms that had been prepared and reduced to a powder and a large deep tray of clarified butter that Gavin had continually been paying attention to . He had to keep it at a set temperature and he had to keep gently siring it so that it remained as he needed it to poach the rabbit loins in.
