Everytime I buy a chicken I end up jointing it or spatching, for me this makes the skin so crispy and tasty and the bonus is you don't have to wait as long for it to cook! There are so many tips and vid's online about how to spatch just make sure you've got a really sharp knife or poultry scissors and your on your way. Em smile
