In early September 2012 I was contacted by ex student Dan Read, he is currently working at Jamie Oliver’s “Fifteen” and had been asked by head chef, Andrew Parkinson to contact East Kent College in order to arrange a charity event. Arrangements were made and Andrew came to college to discuss an event where chefs from Fifteen would come to college and work with the students to produce an evening dinner. With the intention of raising money and awareness for the Fifteen Foundation and the impending NY marathon to be run by four of the Fifteen staff.

After many calls and emails, the day arrived. Andrew, Dan, Charles and Dean  pulled up at college with ingredients and prizes to prepare the meal with the students. Under the guidance of the four chefs, level 3 students worked preparing a seven course meal for the evening guests. Making canapés to petit fours the students were kept busy all day rolling fresh pasta, cooking lobster, grilling pears and freezing sorbet. The students were all volunteers with their only recompense the chance to gain new culinary skills from trade peers.

With food prepared the chef ready and the level 2 front of house staff fully briefed, just after 6pm guests including Will Scobie the Mayor of Margate, started to arrive and were treated to Sparkling Italian wine and canapés such as salmon bruschetta and lamb donuts with rosemary salt. First course after the fresh warm foccacia bread was Buffalo mozzarella di campana, prosciutto di San Danielle, char grilled pears and honey glazed almonds

The chefs then plated their Lobster and celeriac raviolo with a roasted shellfish, tomato, chilli and caper sauce. After a refreshing grape sorbet the team presented their Six hour braised shoulder of lamb with Tuscan chick peas 'inzumino' Cavolo Nero and pickled wild mushrooms.  Dessert was a classic Dark chocolate fondant pudding with Clementine and orange crème fraiche.

Rich fresh macaroons and chocolate ganache served with coffee finished the evening whilst signed Jamie Oliver Books, a beautiful Italian food hamper and champagne were raffled. One lucky student won a day at Fifteen with the chefs in their kitchen gaining in house work experience with the team.

Guests applauded the chefs students and front of house staff at the end of a fabulous day of learning, respect, excitement and great food. The students truly appreciate time spent with them by trade mentors and as an added bonus £2000 was raised to go towards the Fifteen Foundation to help young people become chefs.

Editor's note: The team will be running a special "Pop up NY marathon" in Hyde Park on Sunday the 18th of November as a result of the marathon being cancelled in New York. We say - #SodSandy !
